Nicolas Mori General Manager

Since arriving in London after completion of his formal hospitality training Nicolas has worked in a number of recognisable establishments. From the fine dining, Michelin starred restaurants of Rhodes W1 and Gordon Ramsay to being part of the opening team of Chiswell Street Dining Rooms within the Montcalm 5*. Nicolas has worked his way through the ranks and brings a wealth of experience to The Pearson Room.

Tim Tolley Head Chef

Head Chef Tim Tolley is inspired by fresh and local produce, creating initiatives flavours through simple cooking. His focus is to create a well balance menu that is full of flavours. Tim trained in the US and has worked as head chef at Vong by Jean Georges in New York and London, and Plateau (D&D; Restaurants), and has most recently been consulting on new openings across Central London.
